Ffynnon Wen Farm near Llandeilo keeps a small dairy flock and makes cheese by hand in small batches. Soft Joyce and Great White are sheep’s-milk cheeses, while White Springs combines sheep’s milk with Jersey cow’s milk. East Friesian sheep provide the main dairy breed, with Lleyn sheep introduced to produce a hardier milking flock. The sheep graze the farm’s pastures, and changes in their milk through the milking season give the cheeses natural variation in character across the year.
